I hope everyone enjoyed their Thanksgiving Day meals and quality time with loved ones and family! Though I cherished my free time with my family, I had a destructive experience in the kitchen! Ha! My menu for Thanksgiving was a disaster, except for this amazing vegan fudge recipe. At the end of the night, I found myself sitting at the table eating this fudge out of the pan while my husband ordered takeout. Just because of this ONE dish, I can truly say my Thanksgiving was not a failure!
I searched high and low for the best fudge recipe. I'm known for my love of chocolate so I had to make sure it would be just right. I cannot take much credit on the creation of this recipe, so I'd like to shout out an amazing woman named Angela who founded OhSheGlows.com....and Oh, does this fudge GLOW!!!
1. With electric beaters, beat together the coconut oil and almond butter.
2. Sift in the cocoa powder and beat again until combined.
3. Pour in the maple syrup, vanilla, and salt and beat until smooth.
4. Stir in the walnuts.
5. Line a loaf pan with a piece of parchment paper. Scoop the chocolate mixture into the pan and spread out until even. I took another handful of walnuts, broke them up, and sprinkled over the top of the fudge for extra crunch and good looks.
6. Freeze uncovered for about 1 hour, or until solid. Slice into small squares and prepare to be seduced.

This weeks recipes are very dear to my heart. My love for PF Chang's lettuce wraps is so strong it's almost dysfunctional! I will always hold a special place in my heart for big juicy burgers, and who doesn't enjoy a plateful of creamy pasta on a stormy night?

You might have read earlier in the week about my decision to stop eating red meat. So it was no doubt that I would have to create an alternative option for a cheeseburger. This hearty and healthy black bean burger is as close as it gets!
Creamy Coconut and Spinach Pasta
This recipe was so satisfying and didn't weigh me down with heavy cream and butter. I actually used NO butter or cream! No cow's milk, either! Add chicken or shrimp to this for an extra kick!

I've always loved meat. My mother can still recall the first food I reached for as a baby; a big juicy hamburger.
It's no secret that one of my favorite meals is a burger. It's my go-to quick meal and honestly, nothing beats meat and cheese between bread.
But lately, I've been feeling different about it. Don't get me wrong, my love for big juicy burgers has not changed. However, my love for cows has.
dI have many friends who are vegetarian, vegan, or pescatarian. I never imagined myself living that type of lifestyle. And as corny and cliche as this sounds, I recently watched a video showcasing mass production of beef and was absolutely horrified. I cried for hours on end. I reached out to some of my closest friends and family, telling them I just cannot go back after seeing the horrific way we slaughter meat.
Some gave me advice to get over it, some told me how important it is to eat meat, some tried to console me and remind me that killing animals is part of the food chain. But nobody understood the volume in which I believed that I just CANNOT eat beef anymore.
It's a scary thought to me.
"What will I replace it with?"
"What if I crave a burger?"
"What if I need to eat red meat to be healthy and strong?"
"How will I feel if I fail and eat beef?
These questions flooded my brain, and I knew I couldn't simply say, "NO MORE BEEF" and that would be it.
That type of commitment takes discipline, dedication and sacrifice. This is a habit I've easily succumb to my entire life. I've never decided NOT to eat beef. Until now.
I can't say that I will never eat beef ever again, this decision is not like choosing a shirt to wear for the rest of the day. Call me a commitment-phobe, but making a decision like this is very intimidating and I know that I have to make baby steps. So when I woke up this morning and knew I wanted a burger for dinner tonight, I decided to take my first step towards honoring this commitment and being faithful to my beliefs.
The answer to my questions wasn't hard to find. Vegans and vegetarians have been doing this for years. So I set out to make myself the most delicious, "meatiest" black bean burger I could ever imagine.

So this week my mother came to visit us in Colombia all the way from California! I thought I was the most excited about until my 7 month old daughter squealed and chirped at all the awesome activities Grandma had for her. This gave me many opportunities to create magic in my kitchen....so let's get started right away!
Red Lentil Cakes
This is by far my favorite recipe of the week. My mother also enjoyed it and it was a very satisfying meal without the added fat and calories. This recipe can go a lot of different ways. You can make lentil burgers, with lettuce as the bun! Or you can throw a patty on top of mixed greens and enjoy a salad. Have fun with it!
Tomato Soup Bell Bowl
You may be thinking I should have made this during Halloween! haha! But it was just the touch I needed during the cold weather approaching and the sickness creeping into my home! My husband was sick, then my mother got sick, and I thought I was in the clear! Unfortunately, it caught up with me yesterday and I knew I needed to kick up the Vitamin C. So naturally, I wanted some tomatoes!!
Chickpea Salad Sammy
I'm sure by now you've heard that processed meats, such as deli meat, pepperoni, salami, and bacon are now confirmed to cause Cancer. They reside in the same category as alcohol and tobacco! Yuck! So, I'm going to have to give up my love for deli samiches (yes I said samiches!) and find a satisfying alternative. This sammy reminds me of a chicken salad sammy, which is by far one of my favorites!
I have been staring at my progress pic for the last two days, deciding if I wanted to share it on my website. I shared it on my instagram, but for some reason that feels like a safer place than here.
I'm still new to this whole blogging thing, and to be honest with you the subject matter of my blog makes me very vulnerable. I'm putting myself out there for the world to see my flaws, my struggles, my insecurities. To those who know me, I am a strong-willed and confident person. But I'm still human. I have days where I cry out of frustration because nothing in my closet fits. I get angry at myself for allowing myself to fit back into my "fat clothes". I feel disappointed in myself most of the time. During my quiet moments of reflection I have feelings of sadness and hopelessness. Often I try to find excuses to give up on this blog. I say to myself, "Eh, who cares. I just want a big ass cheeseburger. No one even follows my blog." I have conversations like this with myself daily. And eventually I talk myself out of it.
When I was younger and playing basketball competitively, my coach and Dad taught me something very important that I still practice to this day. When I would go through drills hour after hour alone, he would tell me to "practice like there's someone guarding you."
So I did. I protected the ball like a defender could steal it, I crossed over hard to get by the imaginary person guarding me. I practiced hard, all by myself. And this situation is no different except that the imaginary person guarding me is myself.
I can sabotage my own success.
I can block my own blessings.
I can steal my own happiness.
In order to achieve my goals, I've got to go hard against myself. I've got to get uncomfortable, I've got to push myself to the next level, I've got to BELIEVE that I'm BETTER than my old self!
So with that said, I'm sharing this progress pic after 14 days of being on The Fat Diminisher System. There isn't much of a big difference, but you can notice a slight change in my waist and I definitely FEEL TOTALLLLLLLLLLY different!
Here are some of the things that have drastically changed in the last 2 weeks of starting The Fat Diminisher System:
1. I haven't had ONE cup of coffee, but I have so much energy ALL DAY.
2. I don't feel bloated after meals
3. I have to pull up my jeans because they are falling down as I walk
4. I wake up in the morning 2 hours earlier without any complaints! (I get SO much more done!)
5. I don't crave fatty foods anymore.

This week I got a message from a good friend who is also following The Fat Diminisher System and my blog. She told me she loves how she has been feeling lately with extra energy provided by the Fat Diminisher Drinks, but that she has been having cravings for sweets!
If you know me then you know I have a serious addiction to chocolate! So I completely related to her need for some chocolatey gooey goodness. I promised her I would create a healthy but satisfying recipe.
So yesterday I set out to create something amazing. My hopes were high but I realized a few things. 1. I'm not a baker. 2. I don't know how to make chocolate healthy! LOL
After researching and studying a dozen different recipes, a light bulb turned on above my head and a fire was sparked in my heart. I WAS INSPIRED!
These little balls of heaven are my greatest creation yet. I am so proud of this recipe which is why I just couldn't wait to share it with everyone! So if you've got a serious sweet tooth like me then don't hesitate to make these like right now. RIGHT NOW!!
Immediately put the baked mix in the refrigerator to cool off. You're not done yet! Let chill for about 2 hours.
In a separate bowl, pour the 1 cup of coconut flakes and set aside.
Once the mix is cooled off, cut them like you are making brownies. With clean but wet hands, scoop up each square and roll the mix into small truffles. Drop each truffle in the coconut flakes covering them entirely.
Chill for about 20 more minutes and then enjoy!
I recommend keeping them refrigerated, and they are delicious chilled :)

Meatballs without the Spaghetti!
I was craving meat this week and wanted to indulge in some tasty meatballs without the guilt. So instead of pasta I rested these delicious protein packed meatballs on a bed of zucchini and squash.
This dip was absolutely divine! I was skeptical at first, and thought I was about to make a very big mistake and waste a perfectly good eggplant. But it turned out amazing and with every dip is a surprise of flavors you're sure to love!
